Their architecture and the stuff lying around, mostly, as well as their being the elegant and reclusive people. It's not SUPER OVERT ZAMG but yeah.
Blizzard has said straight-up that the N'elves' architecture is inspired by Japanese and Chinese temple complexes as well as Norse stave churches and the N'elves have not-torii everywhere. Elune isn't exactly Amaterasu, ut there's some passing similarities.
The Blood Elves it's more what's inside the buildings. Cushions on the floor, the low divans and stuff in the inns, and most prominently all the hookahs. So we've got this ~Arabian Nights~/Victorian idea of what a harem is kinda deal, especially with the fine draperies. The building structures have some inspiration from India and the Middle East too (the style of arches and the many many domes).
So with that in mind, yeah, there are undertones. it's not as screaming obvious as, say, the Tauren being coded as Native American, but it's there.
And yeah, Arthas is loads of fun to deal with and write.
